- 1.5 kg kumara
- 2 tsp brown sugar
- ½tsp cinnamon
- 2 beaten eggs
- Butter
- Pineapple juice and rings or chunks
Method:
- boil kumara
- mash with butter and eggs
- add pineapple juice
- place in fireproof dish and decorate with pineapple rings
- sprinkle with brown sugar
- add seasonings.
- brown about ½ hour in moderate oven before serving

Leftover Kumera Pie is excellent served for breakfast with fried eggs.
