- 1 cup soft GF breadcrumbs
- 2 tablespoons sago
- 60g butter
- 1 cup milk
- ½ cup sugar
- 1 cup sultanas
- 1 cup currants
- 1 tablespoon mixed peel
- ¼ teaspoon nutmeg
- ½ teaspoon bicarb. soda
- 1 teaspoon cold water
- 1 egg
- 2 tablespoons corn-based cornflour
- 2 tablespoon brandy
Method:
- Heat milk and pour on crumbs, sago, and butter. Stand overnight or ½ hour.
- Add sugar, sultanas, currants, mixed peel and nutmeg. Mix thoroughly.
- Dissolve soda in cold water and add.
- Beat egg and stir in lightly.
- Sift in cornflour and stir.
- Pour into greased basin.
- Steam 2½ hours. Add boiling water often to keep ½ way up side of steamer.
