Easy & Fast Macaroni

Ingredients
  • water [see method]
  • 1 cup milk
  • 1 dessert spoon of butter or margarine
  • 250 g uncooked GF macaroni
  • 3 cups of shredded Cheddar cheese
  • 2 heaped tsp cornflour
  • half large capsicum, diced
  • small quantity of Parmesan cheese
  • four pieces of finely sliced ham, or equivalent quantity of cooked bacon, cut into 0.5cm strips
  • ground pepper and salt
Method
  1. Half-fill a large saucepan with water & bring to the boil
  2. Stir in macaroni & diced capsicum. Put lid on the saucepan, bring back to the boil, lower heat, simmer for 6 mins, stirring occasionally
  3. Take off heat, stir and let stand for 5 mins
  4. While macaroni is standing, toss cheese and cornflour together an a plastic bag
  5. When the 5 minutes is up, drain liquid from the macaroni
  6. Grind pepper and salt (to taste) over saucepan's contents
  7. Stir in cheese, milk & ham
  8. Place back on stove top and heat for 5 mins at the same setting used to simmer macaroni, stirring occasionally
  9. Serve, shaking over Parmesan cheese to taste.
