Park Ridge Casserole [Slow Cooker]

Ingredients

  • 1 kg chuck steak, fat removed & cut into bite sized pieces
  • 2/3 cup uncooked brown rice
  • 3 medium potatoes peeled & roughly diced into ~2 cm cubes
  • 1 1/2 cups chicken stock made from two heaped teaspoons of stock powder mixed in boiling water
  • 1 small tin tomato paste
  • 2 medium sized tomatoes diced or one punnet of cherry tomatoes added once the the slow cooker starts bubbling
  • 1 medium brown onion diced
  • 3 sticks of celery cut in ~1 cm wide pieces
  • 1 large carrot cut in ~2 mm thick pieces
  • 1 medium red capsicum roughly diced into ~2.5 cm x 1 cm pieces
  • 1 large clove of garlic finely chopped
  • 1 Tbsp Worcestershire sauce 
Method
  1. Add steak to slow cooker
  2. Add all other ingredients
  3. Cook on low for 8 hours or 3-4 hours on high, stirring occasionally after it starts bubbling
  4. Serve with green veggies
