1 x bunch rhubarb (~600gm) cut into 3cm pieces
Crumble
3 x tbsp almond meal
4 x tbsp rice flour
2 x tbsp desiccated coconut
2 x tbsp white sugar
1.5 x tbsp melted butter or margarine

Method
- Pre-heat oven to 180 C
- Combine rhubarb with caster sugar and cook over low heat for 15mins, stirring occasionally
- Add apples to rhubarb and simmer for a further 15 minutes, stirring occasionally
- While apples and rhubarb are simmering, mix all crumble ingredients together in a bowl, firstly with a knife blade and then with your fingers
- When apples & rhubarb have simmered for the designated time, transfer to a 10cm oven-proof dish
- Sprinkle crumble evenly over apple rhubarb mixture
- Bake in oven for 25mins
- Serve with cream or ice-cream
