- 400 gm tin pink salmon
- 1 tbsp margarine
- 1 cup milk
- Juice one lemon
- Chopped coriander to taste
- Pepper to taste
- 1 bunch asparagus
- 2 tbsp plain GF flour or cornflour
- 2 large potatoes, peeled, cooked & mashed
Method
- Pre-heat oven to 200 C
- Cut asparagus into 2 to 3 cm pieces and fry in a non-stick pan until tender, set aside
- Melt margarine in the pan
- Add flour, stir rapidly to make an even paste
- Add milk gradually continually whisking to ensure no lumps form
- Cook until thickens
- Add salmon, coriander, lemon juice, pepper and asparagus, mix evenly
- Place in a greased pie-dish. Top with mashed potato.
- Brown in oven (approximately 25 minutes)
Enjoy. This is a simple, yet very tasty dish.
