- 1 piece haloumi cheese, cut into 8 pieces (cut in half first along the long dimension, from the label side down, rotate each piece 90° then cut each into four pieces again along the long dimension--doing it this way gives more chance that the pieces will not fall apart)
- 16 pieces of large asparagus (or 24 pieces of small asparagus), trimmed at base
- 8 pieces of prosciutto
- Dried mixed Italian herbs
- Black pepper
- Olive oil
Method
- Pre-heat oven to 200° C
- Brush each piece of haloumi with olive oil, sprinkle on both sides with mixed herbs & a light dusting of ground black pepper
- Brush prosciutto with olive oil on both sides
- Place each piece of haloumi cheese on 2 (or 3) pieces of asparagus and wrap with prosciutto, brush exposed asparagus with olive oil
- Brush an biscuit tray with olive oil and place each haloumi & asparagus wrap on the tray with plent of space in-between
- bake in oven for 15 minutes, serve hot.
