Wok-fried Gnocchi, Bacon & Broad Beans

Ingredients

  • 500g GF gnocchi (from the health food section of the supermarket)
  • Olive oil
  • 250g punnet cherry tomatoes
  • 1 cup blanched, podded broad beans 
  • 100g bacon cut into ~3cm strips
  • Zest & juice of one lemon or lime
Method
  1. Cut cherry tomatoes in half and set aside in a bowl
  2. Heat some oil in a small non-stick wok, add bacon strips and cook until brown (toss frequently)
  3. Leaving the oil in the wok, remove bacon & place on top of the bowl of sliced tomatoes (helps the bacon favour permeate through the tomatoes)
  4. Add a little more oil to the wok and and stir-fry the gnocchi, in two batches, until brown
  5. Add all ingredients to wok and toss frequently until heated through
  6. Suggestion: serve with a few rocket leaves & crumbled feta cheese
