- 500g beef mince
- 1 clove garlic, minced
- 400g can diced tomatoes infused with herbs of choice (e.g. onion & oregano)
- 400g can red kidney beans
- 1 tsp beef stock powder
- 2 tbsp tomato paste
- 4 medium potatoes, peeled and diced
- Margarine, milk, salt & pepper as required for the mash
- Grated parmesan cheese
Method
- Preheat oven to 200 C
- Boil the potatoes in a saucepan until soft and mash (adding margarine, dash of milk and salt and pepper to taste)
- At the same time, add garlic and mince to a non-stick pan and cook until mince is browned
- Add all remaining ingredients, except the cheese, the pan and simmer for 5 minutes
- Spoon mix into 4 ramekins, top with potato mash and sprinkle with parmesan cheese
- bake in oven until brown on top, serve with salad.
