- 1 Tbsp cooking oil
- 1 Brown onion finely diced
- 1 Stick celery, finely diced
- 1 Clove garlic, crushed
- 2 Cups frozen or canned corn
- 500 g chicken, sliced
- 1 Litre GF chicken stock
- 150 g snow peas, chopped into 2 cm pieces
- 1 Tbsp GF soy sauce
Method:
- The oil in a pan over medium heat
- Heat the onion, garlic and chicken until the onion is soft and the chicken is browned
- Add the corn and stock, bring to the boil and simmer for 10 minutes until the chicken is cooked through
- Stir in the soy sauce, snow peas and serve.
