- 1 cup cooked long grain rice
- 1/2 cup pine nuts, toasted
- 1/2 cup sultanas
- 1 stick celery diced
- 4 shallots, chopped
- 1/2 cup chopped walnuts
- 2 tbsp glace ginger, finely chopped
- 4 dried apricots, finely chopped
Ingredients-Dressing:
- 1/4 cup orange juice
- 2 tbsp olive oil
- 1 clove garlic chopped with half-moon
- 1 tsp freshly grated ginger
- 2 tsp honey
- 1 tsp lemon juice
Method:
- Combine all Main Ingredients in a salad bowl
- Combine all Dressing Ingredients in a sealable jar and shake well
- Add dressing to Main Ingredients and mix through thoroughly
- Cover with cling-wrap and refrigerate for several hours before serving
