Creamy Char-Grilled Capsicum Penne
Ingredients
- 250 g GF penne
- 1 tbsp olive oil
- 1 onion, diced
- 2 tbsp minced garlic
- 3 cups baby spinach leaves
- 250 g jar char-grilled capsicum, sliced
- 300 ml carton long-life cooking cream
- 1 cup GF chicken stock
- Ground black pepper to taste
- Parmesan cheese
Method
- In a large saucepan of salted boiling water cook penne according to packet instructions
- When penne is cooked, pour off half a cup of liquid and reserve
- Strain off the remaining liquid & set the penne aside in the strainer for later
- Return saucepan to hotplate & add oil
- Add onion and garlic & cook until soft
- Add spinach & capsicum - cook until spinach is wilted
- Stir in cream, chicken stock & reserved liquid from penne - bring to a simmer
- Add cooked penne & stir until re-heated - season with cracked pepper
- Garnish with Parmesan cheese & serve
