Chicken with Orange Sauce

Ingredients:

  • 1 whole chicken quartered
  • ½ cup cornflour & 2 tbsp cornflour
  • ½ tsp ground nutmeg
  • ½ tsp cinnamon
  • 2 sweet potatoes, peeled & sliced
  • 400 gm pineapple pieces, liquid reserved
  • Sauce:
    • 300 ml GF chicken stock
    • 150 ml orange juice
    • Juice set aside from the can of pineapple pieces
    • 2 tbsp cornflour mixed in a cup with a little cold water until smooth
    • ¼ cup cream
    • 2 tbsp amount chopped parsley
    • 2 tbsp ground almond

Method:

  1. In a bowl, combine ½ cup cornflour, nutmeg and cinnamon. 
  2. Coat chicken with flour mixture. 
  3. Place sweet potatoes and pineapple pieces in the bottom of  a large slow cooker. 
  4. Arrange chicken on top.
  5. Mix all ingredients for sauce in a jug and pour over chicken.
  6. Cover and cook for 3 to 4 hours on high.
  7. Serve on a bed of hot rice.
