Chicken with Orange Sauce
Ingredients:
- 1 whole chicken quartered
- ½ cup cornflour & 2 tbsp cornflour
- ½ tsp ground nutmeg
- ½ tsp cinnamon
- 2 sweet potatoes, peeled & sliced
- 400 gm pineapple pieces, liquid reserved
- Sauce:
- 300 ml GF chicken stock
- 150 ml orange juice
- Juice set aside from the can of pineapple pieces
- 2 tbsp cornflour mixed in a cup with a little cold water until smooth
- ¼ cup cream
- 2 tbsp amount chopped parsley
- 2 tbsp ground almond
Method:
- In a bowl, combine ½ cup cornflour, nutmeg and cinnamon.
- Coat chicken with flour mixture.
- Place sweet potatoes and pineapple pieces in the bottom of a large slow cooker.
- Arrange chicken on top.
- Mix all ingredients for sauce in a jug and pour over chicken.
- Cover and cook for 3 to 4 hours on high.
- Serve on a bed of hot rice.
