Kidney Beans & Diced Sausage with Rice

Ingredients

  • 8 thin sausages
  • 1 onion diced
  • 1 capsicum, diced
  • 1½ tsp crushed garlic
  • 1 can kidney beans, rinsed
  • 400g tin diced tomatoes
  • ½ tsp dried oregano
  • ½  tsp pepper
  • 1 dsp honey
  • 1 cup basmati rice

Method

  1. Cook The Rice
  2. At the same time, cook the sausage in a large fry pan with a small dash of cooking oil  for about 5 minutes
  3. Cut sausages into 1cm pieces and add back to pan
  4. Stir in onion, capsicum, and garlic, sauté until tender
  5. Add beans, tomatoes (including their juice) and honey
  6. Season with oregano and pepper
  7. Simmer uncovered for about 20 minutes
  8. Serve over rice
